America loves its sweets, but it’s now clear we should cut way back. According to the latest Centers for Disease Control and Prevention data, almost 40% of adults in this country are obese. This is a major public health crisis, as obesity sharply increases the risk of type 2 diabetes, heart disease and certain cancers.
Fortunately, consumers get the message. A 2016 Mintel survey showed a whopping 84% of U.S. adults are trying to limit the amount of sugar in their diet. They are increasingly aware that added sugar isn’t found only in outwardly sweet treats such as candy, cookies, cakes and soft drinks; it is also hidden in condiments, crackers, breads, cereals and other staples.
To meet consumer expectations, formulators are finding myriad ways to create delicious products with fewer or no added sugars. For a long time, this meant swapping in a low- or no-calorie artificial sweetener such as sucralose, saccharine, aspartame or acesulfame. But such synthetic substitutes have since fallen out of consumer favor.
